3 Weeks of Go-To Weeknight Dinner Recipes

I promised in my recent post, Managing Groceries and Meal Planning, to share my go-to weeknight dinner recipes which help me to consistently feed my family of four home cooked meals on hectic weeknights. So today I am back with 15 tasty recipes, all of which make frequent appearances on our weekly meal lists.

For me, a recipe is a good candidate for weeknights when it has at least one of the following characteristics:

  • Quick Cooking – 3o minutes (or less!) from start to finish
  • Reheats Well– Can be made ahead (usually over the weekend), cooled and refrigerated, and reheated
  • Slow Cooker– Can be quickly tossed in slow cooker in the AM, and can withstand at least 9-10 hours of cooking and still turn out delicious
  • Prep Ahead – Part of the recipe can be completed in advance (either the night before or over the weekend) to get dinner on the table more quickly

Quick Prep Ahead Slow Cooker Reheats Well
White Chicken Chili X     X Mince the onions, peppers, and garlic in the food processor. It makes for faster prep and a shorter cooking time.
Flank Steak X       Leftovers are great as a steak salad!
Chickpea Curry X     X
Chicken Piccata X      
Chicken Tikka Masala   X X Leave the chicken thighs whole so the recipe can cook longer in the crock pot without getting mushy.
Peanut Butter Noodles X       Toss in diced roasted chicken for a more filling entrée.
Carnitas Tacos   X X Omit the beer, it doesn’t need it! I serve this on soft corn tortillas with pico de gallo, sour cream, and cilantro. Yum!
Chicken Fried Rice X    
Cheddar Corn Chowder     X Cut this recipe in half. It will still feed 4 with leftovers.

Thai-Style Halibut X If your store doesn’t have halibut, grab any good looking white fish.
Mac & Cheese X Assemble ahead up to baking step and refrigerate or freeze. Half a pan feeds 4, so split into 2 8×8 pans and freeze half. When halving, cook time is around 15 minutes.
Spinach & White Bean Pasta X
